Foodservice Recipe

Ingredients:

  • 3 cups oat milk
  • 1 tbsp lemon juice
  • 2 cups + 7 tbsp all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp baking soda
  • ¾ tsp salt
  • ½ cup plant-based butter
  • 8 oz Hungry Planet Italian Sausage™
  • 2 tbsp canola oil
  • 1 cup vegetable stock
  • ½ tsp poultry seasoning
  • ¾ tsp salt
  • ½ tsp pepper

Instructions:

  • Step 1.

    Preheat oven to 450°F then combine 1 cup oat milk and 1 tbsp lemon juice in a bowl.

  • Step 2.

    Sift the 2 cups flour, 1 tbsp baking powder, ½ tsp baking soda, and ¾ tsp kosher salt into a bowl.

  • Step 3.

    Cut ¼ cup vegan butter into flour mixture until mixture is sandy-like. Add oat milk mixture from step 1 and stir into flour mixture until just incorporated. Do not mix or knead too long. Turn onto a floured work surface and fold in half. Repeat twice. Use additional flour to prevent sticking.

  • Step 4.

    Press dough into a 1" thick square. Cut biscuits with a 2 1/2" cutter. You can also use a glass turned upside down to cut the biscuits.

  • Step 5.

    Place biscuits on a parchment paper lined baking sheet in two rows, making sure they just touch. Gently press the remaining dough together and cut out one or two more biscuits. Press middle of biscuit down. Brush with melted vegan butter.

  • Step 6.

    Bake biscuits at 450°F for 10-15 minutes.

  • Step 7.

    While the biscuits are in the oven, make the gravy. Brown 8 oz Hungry Planet Italian Sausage™ in the 2 tbsp canola oil over medium high heat. Remove.

  • Step 8.

    Add ¼ cup vegan butter and 7 tbsp flour to the pan and stir smooth. Cook for 2-3 minutes.

  • Step 9.

    Whisk 2 cups oat milk into flour mixture slowly. Whisking until smooth.

  • Step 10.

    Stir 1 cup vegetable stock into oat milk, add ½ tsp poultry seasoning, ¾ tsp kosher salt and ½ tsp black pepper, and simmer for 10 minutes. Add Hungry Planet Italian sausage to sauce and simmer for 5 minutes.

  • Step 11.

    Pour gravy onto each biscuit and enjoy hot.
