Foodservice Recipe

Ingredients:

  • 16 ounce Hungry Planet Italian Sausage™ Plant-Based GroundBuy Now
  • 1 teaspoon of lemon zest
  • 6 cups sourdough bread, cut or torn into 2 inch size pieces
  • ½ cup roasted red peppers, sliced
  • ½ cup onions
  • 1 tablespoon chopped garlic
  • 1 teaspoon crushed red pepper flakes
  • 1 teaspoon fresh thyme, chopped
  • 1 tablespoon fresh sage, chopped
  • 2 teaspoons rosemary, chopped
  • 4 cups Just Egg, or another vegan egg substitute
  • 1 cup vegan parmesan cheese, grated
  • 1 cup vegan mozzarella, shredded
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 3 tablespoons olive oil
  • Salt and pepper, to taste

Instructions:

  • Step 1.

    Preheat oven to 350°F.

  • Step 2.

    In a medium-sized skillet, heat up 2 tablespoons of vegetable oil, on medium heat. Once hot, add Hungry Planet Italian Sausage™ and cook, browning meat on all sides and internal temperature reaches 165°F, about 6 minutes. Season with salt and pepper and add lemon zest. Stir and remove from pan.

  • Step 3.

    In the same pan, add 2 teaspoons of olive oil and heat on medium heat. Add roasted red peppers, onions, garlic, thyme, sage, and rosemary. Cook for 4 minutes or until onions start to get tender. Remove from heat and add to cooked sausage.

  • Step 4.

    In a large bowl, add cooled sausage and vegetable mixture, bread crumbs, Just Egg, vegan cheeses, and mix until incorporated.

  • Step 5.

    Oil a 9 x 13-inch sized casserole dish or baking dish. Add mixture to dish and bake for 40 minutes.

  • Step 6.

    Once done, top with your favorite herbs like parsley, thyme, or fresh rosemary.
