Foodservice Recipe

Ingredients:

  • 2 tablespoons olive oil
  • 3 ounce shiitake mushrooms, sliced
  • 1 cup red onions, sliced
  • 2 cups bell peppers, red and green, sliced
  • 2 teaspoons garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1½ tablespoons vegetable oil
  • 16 ounce Hungry Planet Chicken™ Grilled StripsBuy Now
  • 2 teaspoons ancho chili powder
  • 1 teaspoon chipotle powder
  • 2 teaspoons cumin
  • 2 teaspoons lime juice, freshly squeezed
  • 8 - 6 inch flour or corn tortillas
  • 1 cup store-bought or homemade guacamole
  • * Please use whatever products you have in your kitchen; plant-based ingredients are just what we have in ours.

Instructions:

  • Step 1.

    Heat a large skillet, over medium-high heat. Add 2 tablespoons of olive oil to the skillet, and once hot, add mushrooms, and cook for 4 minutes, or until mushrooms start to brown. Next, add the bell peppers, and onions and cook for an additional 3 minutes. Finally, add the garlic, oregano, and 1 teaspoon of salt, and ½ teaspoon of black pepper, stir and cook for 2 minutes. Remove from heat and set aside in a separate bowl.

  • Step 2.

    Place the same skillet over medium heat and add 1½ tablespoons of oil. Once hot, add Hungry Planet Chicken™ and cook for 2 minutes. After 2 minutes, add cumin, ancho chile and chipotle powders, and lime juice. Stir, and cook until the chicken is browned and reaches an internal temperature of 165℉.

  • Step 3.

    To assemble, spread out 8 tortillas and add 2 tablespoons of guacamole to each one. Add equal amounts of chicken and veggies to each fajita and enjoy. Feel free to add your favorite salsa, fresh herbs, or vegan sour to elevate this easy and delicious meal.
