Ingredients:

  • 4 tablespoons vegetable oil
  • 3 cups succotash (corn and lima beans), frozen
  • 1 tablespoon smoked paprika
  • 2 teaspoons ground cumin
  • 4 Hungry Planet Chicken™ Chipotle PattiesBuy Now
  • 1 red bell pepper, sliced
  • ¼ cup guacamole
  • 2 tablespoons fresh chopped cilantro

Instructions:

  • Step 1.

    Heat oven to 375°F. Arrange succotash and red pepper on a baking tray and drizzle with oil, spices, and a large pinch of salt. Bake until vegetables are thoroughly cooked for about 10 to 15 minutes.

  • Step 2.

    In a medium-size nonstick skillet, heat oil over medium-low heat. When oil is hot, place frozen Hungry Planet Chicken™ Chipotle Patties in the skillet, cover, and cook for 5 minutes. Flip patties and cook for an additional 4 minutes or until internal temperature reaches 165°F.

  • Step 3.

    Garnish with guacamole, lime wedges, and cilantro.
