  • 4 tbsp vegetable oil
  • 3 cups Succotash (corn and lima beans), frozen
  • 1 tbsp smoked paprika
  • 2 tsp ground cumin

  • 1 red bell pepper, sliced
  • 1/4 cup guacamole
  • 2 tbsp fresh chopped cilantro

  • Step 1.

    Heat oven to 375°F. Arrange succotash and red pepper on a baking tray and drizzle with oil, spices, and a large pinch of salt. Bake until vegetables are cooked through (10-15 minutes).

  • Step 2.

    In a medium size nonstick skillet, heat oil over medium-low heat. When oil is hot, place frozen patties in the skillet, cover and cook for 5 minutes. Flip patties and cook for an additional 4 minutes or until internal temperature reaches 160°F.

  • Step 3.

    Garnish with guacamole, lime wedges, and cilantro.
