Ingredients:

  • 8 ounce Hungry Planet Pork™ Thai MeatballsBuy Now
  • 2 tablespoons olive oil
  • 1 red bell pepper, cut in strips
  • 1 green bell pepper, coarsely chopped
  • 1 yellow bell pepper, sliced
  • 12 ounce broccoli florets
  • ½ cup Teriyaki sauce
  • Sesame seeds, garnish
  • Green onions, garnish
  • White basmati, for serving

Instructions:

  • Step 1.

    Preheat oven to 425℉. Prepare a parchment or foil-lined baking sheet.

  • Step 2.

    Toss veggies with olive oil on a large sheet tray to coat veggies evenly. Salt and pepper to taste.

  • Step 3.

    Place meatballs on the sheet tray with the peppers.

  • Step 4.

    Brush Hungry Planet Pork™ Thai Meatballs with the prepared Teriyaki sauce, and then drizzle the rest of the sauce over the veggies on the sheet tray.

  • Step 5.

    Roast peppers and meatballs at 425℉ for 12 minutes and remove from oven and toss. Add broccoli and roast for an additional 6 to 8 minutes. Cook rice and serve in bowl.
