Instructions:

  • Step 1.

Cook the pasta according to package directions. Drain and set aside.

  • Step 2.

In a large skillet, cook the vegan bacon according to package directions. Transfer to a cutting board and roughly chop. Place the bacon pieces in a large bowl.

  • Step 3.

In the same skillet, heat the vegetable oil over medium-high heat. Add the Hungry Planet Beef™ and cook, breaking up with a spatula, until lightly browned. Add the onion, garlic, and season with salt. Cook until the onion is translucent, 2 to 3 minutes. Transfer the beef mixture to the bowl with the bacon.

  • Step 4.

Lower the heat to medium and melt the butter. Stir in the flour to form a paste and cook for 1 minute, stirring constantly. Slowly drizzle in the milk and stock, whisking constantly, until smooth. Whisk in the ketchup and cheese. Season the sauce with salt and pepper, to taste.

  • Step 5.

Add the beef and bacon mixture to the sauce and stir to combine. Gently fold in the cooked pasta. Stir on low heat until everything is warmed through. Add a small amount of water or stock if the sauce gets too thick.

  • Step 6.

Serve the macaroni and cheese in bowls, garnished with fried onions (if using) and parsley.
