Foodservice Recipe

Ingredients:

  • 1 pound Hungry Planet Beef™ Plant-Based GroundBuy Now
  • 2 tablespoons olive oil
  • 1 cup raw onions, chopped
  • ⅓ cup poblano pepper, chopped
  • ¼ teaspoon garlic
  • 1 teaspoon chili powder
  • 1¾ teapoons cumin
  • 2½ teaspoons dried oregano
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 2½ tablespoons chipotle chilis, canned
  • ⅔ cup great northern beans, canned
  • 1⅔ cups crushed tomatoes
  • 1 cup vegetable stock
  • 1¼ teaspoon cilantro, finely chopped
  • For serving (optional): rice, lime, sour cream, cheese, fresh cilantro

Instructions:

  • Step 1.

    Heat 1 tablespoon olive oil in a large chili pot until smoking. Add 1 pound Hungry Planet Beef™ and brown. Stir frequently and scrape the bottom.

  • Step 2.

    In a separate pan, heat the remaining 1 tablespoon olive oil and saute 1 cup chopped onions, ⅓ cup chopped poblano pepper, and ¼ teaspoon garlic until soft (8 to 10 minutes). Add 1 teaspoon chili powder, 1¾ teaspoons cumin, and 2½ teaspoon oregano. Heat spices to activate aroma.

  • Step 3.

    Add sauteed onion mixture and remaining ingredients (1 teaspoon salt, ½ teaspoon pepper, 2½ tablespoons chipotle chilis, ⅔ cup great northern beans, 1⅔ cup crushed tomato, 1 cup vegetable stock, and 1¼ teaspoons cilantro) to the beef. Simmer for 45 minutes. Adjust seasoning with salt.
