Foodservice Recipe

Ingredients:

  • 1 lb Hungry Planet Beef™ Ground (1lb)
  • 2 tbsp olive oil
  • 1 cup raw onions, chopped
  • ⅓ cup poblano pepper, chopped
  • ¼ tsp garlic
  • 1 tsp chili powder
  • 1 ¾ tsp cumin
  • 2 ½ tsp dried oregano
  • 1 tsp salt
  • ½ tsp pepper
  • 2 ½ tbsp chipotle chilis, canned
  • ⅔ cup great northern beans, canned
  • 1 ⅔ cups crushed tomatoes
  • 1 cup vegetable stock
  • 1 ¼ tsp cilantro, finely chopped
  • For serving (optional): rice, lime, sour cream, cheese, fresh cilantro
  • * Please use whatever products you have in your kitchen; vegan ingredients are just what we have in ours.

Instructions:

  • Step 1.

    Heat 1 tbsp olive oil in a large chili pot until smoking. Add 1 lb Hungry Planet Beef™ and brown. Stir frequently and scrape the bottom.

  • Step 2.

    In a separate pan, heat the remaining 1 tbsp olive oil and saute 1 cup chopped onions, ⅓ cup chopped poblano pepper, and ¼ tsp garlic until soft (8-10minutes). Add 1 tsp chili powder, 1 ¾ tsp cumin, and 2 ½ tsp oregano. Heat spices to active aroma.

  • Step 3.

    Add sauteed onion mixture, and remaining ingredients (1 tsp salt, ½ tsp pepper, 2 ½ tbsp chipotle chilis, ⅔ cup great northern beans, 1 ⅔ cup crushed tomato, 1 cup vegetable stock An 1 ¼ tsp cilantro) to the beef. Simmer for 45 minutes. Adjust seasoning with salt.
