Ingredients:

  • 1 ½ tsp olive oil
  • 4 tbsp finely chopped onions
  • 1 lb Hungry Planet Chicken™ Plant-Based GroundBuy Now
  • 1 ½ tsp garlic minced
  • 1 ½ tsp lemon zest
  • ⅓ dijon mustard
  • ½ tsp dried thyme
  • ½ tsp dried oregano
  • ½ tsp dried rosemary
  • ¼ tsp dill chopped
  • ½ tsp parsley
  • ½ tsp salt
  • 4 tbsp water
  • 5 pieces of Pita bread
  • 1 cup hummus
  • 1 cup chopped lettuce
  • 1 tomato chopped
  • 2 ⅓ tbsp red onion, sliced
  • 2 ⅔ tbsp kalamata olives, chopped
  • 2 ¼ tbsp mint leaves, chopped
  • ½ cup vegan mayonnaise*
  • ½ cup vegan sour cream*
  • 1 tbsp finely chopped onions
  • ½ cup cucumber, chopped
  • 2 tsp garlic, finely minced
  • 1 tbsp dill
  • 1 tbsp red wine vinegar
  • 1 tbsp olive oil
  • 1 lemon juiced and zested
  • ½ tsp mint
  • ½ tsp salt
  • ⅓ tsp pepper
  • * Please use whatever products you have in your kitchen; vegan ingredients are just what we have in ours.

Instructions:

  • Step 1.

    Preheat oven to 375°F for a later step. In a large skillet, heat olive oil and saute onion until brown. Cool.

  • Step 2.

    To make the seasoned chicken gyro, use a large bowl to combine chilled onions with remaining 1 lb Hungry Planet Chicken™, 1 ½ tsp garlic minced, 1 ½ tsp lemon zest, ⅓ dijon mustard, ½ tsp dried thyme, ½ tsp dried oregano, ½ tsp dried rosemary, ¼ tsp dill chopped, ½ tsp parsley, and ½ tsp salt.

  • Step 3.

    Spread chicken mixture 1” thick into a baking pan and cover with foil. Bake at 375°F for 7-8 minutes.

  • Step 4.

    When gyro chicken is cool, slice and saute in oil in a very hot pan.

  • Step 5.

    Make the vegan tzatziki sauce by combining all the following ingredients in a medium bowl: ½ cup vegan mayonnaise, ½ cup vegan sour cream, 1 tbsp onions, ½ cup cucumber, 2 tsp garlic, 1 tbsp dill, 1 tbsp red wine vinegar, 1 tbsp olive oil, 1 lemon juiced and zested, ½ tsp mint and ½ tsp salt.

  • Step 6.

    Place each pita on a plate and spread with hummus. Top with shredded lettuce and diced tomatoes. Add chicken to top of pitas and garnish with red onion, olives, and fresh mint. Top with tzatziki and roll up.
