Foodservice Recipe

Ingredients:

  • 1 lb fettuccine pasta, dry
  • 12 oz Hungry Planet Chicken™
  • 1 tsp garlic powder
  • 3/4 tsp kosher salt
  • 1/2 tsp black pepper
  • 2 cups flour
  • 1 tsp Cajun seasoning
  • 1tbsp olive oil
  • ¼ cup plant-based margarine*
  • ½ cup onions
  • 3 ⅓ tbsp minced garlic
  • 3 ¾ qt baby spinach
  • ½ tsp nutmeg
  • 1 cup plant-based cream cheese*
  • 1 ½ cup vegetable broth*
  • 4 tbsp lemon juice
  • ½ cup plant-based parmesan*

Instructions:

  • Step 1.

    Season well-chilled 12 oz Hungry Planet Chicken™ with the patty seasoning: ¼ tsp kosher salt, ⅛ tsp black pepper and 1 tsp garlic powder. Blend well. Pat out into 6 patties.

  • Step 2.

    Blend 1 pt flour and 1 tsp Cajun seasoning and lightly dust chicken patties. Pan fry in vegetable oil until golden brown.

  • Step 3.

    Cook 1 ½ cups fettuccine pasta according to package directions.

  • Step 4.

    In a medium skillet over medium heat 1tbsp olive oil and ¼ cup plant-based margarine*. Add ½ cup onions and 3 ⅓ tbsp minced garlic and saute for 3-4 minutes.

  • Step 5.

    Add 3 ¾ qt chopped baby spinach, season with salt and pepper. Cook until spinach is wilted around 3 minutes. Take off heat and set aside.

  • Step 6.

    In a sauce pot over low heat, whisk 1 cup plant-based cream cheese* and 1 ½ cup vegetable broth* until smooth.

  • Step 7.

    Add 4 tbsp lemon juice , ½ tsp nutmeg, and season with ½ tsp kosher salt and ¼ black pepper.

  • Step 8.

    When sauce is thickened and bubbly stir in the ½ cup plant-based parmesan*. Combine and turn off heat. If sauce gets too thick add a little more vegetable broth.

  • Step 9.

    When sauce is ready combine with pasta and spinach. Serve with Hungry Planet Chicken™ on top.
