Roll the 4 oz Hungry Planet Chorizo™ into a sausage approximately 1 inch thick. Partially freeze, around 10-15 minutes.
Reduce ⅓ cup sherry vinegar to a glaze (about 5 teaspoons). Reserve.
Cut both (2) pears into eighths. Grill pears quickly to char slightly. Reserve.
Slice sausage into 16 bite-size pieces. Saute for 3-5 minutes over medium-high heat.
Pipe a dollop of mayo on the 8 slices of bread. Top with sausage, drizzle with reduce sherry vinegar. Top with grilled pear.
