- 4 ounce Hungry Planet Chorizo™
- ⅓ cup sherry vinegar
- 2 pears
- 2 teaspoons vegan mayonnaise
- 8 slices French or Vienna bread

Roll the 4 ounce Hungry Planet Chorizo™ into a sausage approximately 1 inch thick. Partially freeze, around 10 to 15 minutes.
Reduce ⅓ cup sherry vinegar to a glaze, about 5 teaspoons. Reserve.
Cut both (2) pears into eighths. Grill pears quickly to char slightly. Reserve.
Slice sausage into 16 bite-size pieces. Saute for 3 to 5 minutes over medium-high heat.
Pipe a dollop of mayonnaise on the 8 slices of bread. Top with sausage, drizzle with reduce sherry vinegar. Top with grilled pear.
