Foodservice Recipe

Ingredients:

  • 1/4 cup plant-based margarine*
  • 1 cup onion, diced
  • 2 ¼ tbsp garlic, minced
  • 12 oz Hungry Planet Chicken™
  • 2 tsp salt and pepper (each)
  • 1 tbsp Italian seasoning
  • 1 cup white rice uncooked
  • 1 ⅛ qt vegetable stock
  • 1 cup frozen peas
  • 1 cup plant-based cream*
  • ½ cup plant-based parmesan chees*
  • * Please use whatever products you have in your kitchen; plant-based ingredients are just what we have in ours.

Instructions:

  • Step 1.

    Melt 1/4 cup margarine over medium heat. Add 1 cup onions and cook until translucent (2-3 minutes). Add 2 ¼ tbsp garlic and cook until aromatic (1 minute).

  • Step 2.

    Add 12 oz Hungry Planet Chicken™ to onions and garlic, breaking it up into small pieces while allowing the meat to cook (3-4 minutes). Season with 2 tsp salt, 2 tsp pepper, and 1 tbsp Italian seasoning.

  • Step 3.

    Add 1 cup rice to searing chicken and mix to coat rice. Add 1/3 of hot vegetable stock and stir to combine. Stir mixture often until liquid has absorbed before adding another 1/3 of vegetable stock. Repeat, while stirring often, until all the stock has been absorbed and rice is cooked (about 15-20 minutes).

  • Step 4.

    When rice has cooked, add 1 cup frozen peas, ½ cup parmesan, and 1 cup cream. Continue stirring until peas have cooked and the cheese has melted. Rice should be creamy, add cream if consistency is less than creamy. Taste for seasoning.

  • Step 5.

    Garnish with freshly ground black pepper and picked parsley leaves.
