    Ingredients

Ingredients:

  • 1 cup sweet potato, diced
  • 8 ounce Hungry Planet Chicken™ Grilled StripsBuy Now
  • 2 teaspoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • ¼ teaspoon paprika
  • 1 apple, Honeycrisp or Pink Lady, cored and sliced
  • 2 cups Spring Mix lettuce
  • ½ cup dried cranberries
  • 2 tablespoons vegan feta cheese, crumbled
  • 2 tablespoons pecans, toasted, unsalted, and chopped
  • Balsamic Vinaigrette Dressing

Instructions:

  • Step 1.

    Preheat oven to 400℉.

  • Step 2.

    Place chopped sweet potatoes and Hungry Planet Chicken™ on a parchment paper-lined sheet tray, and season with olive oil, salt, pepper, and paprika.

  • Step 3.

    Place sweet potatoes in oven and roast for 10 minutes. Remove from oven and toss. Add Hungry Planet Chicken™ and roast for an additional 6 minutes (total time: 15 - 18 minutes)

  • Step 4.

    Toss the sweet potatoes and chicken with Spring Mix lettuce, sliced apple, dried cranberries, feta, and pecans. Drizzle with vinaigrette dressing and enjoy!
