Italian Meatballs with Spaghetti Squash

Ingredients:

  • 2 Spaghetti Squashes ~ 2 lbs
  • 4 tbsp Extra Virgin Olive Oil
  • 3/4 tsp Kosher Salt
  • 4 tbsp Vegan Butter
  • 2 packs Hungry Planet Italian Sausage Meatballs
  • 2 cups Tomato Marinara Sauce
  • 6 tbsp Grated Dry Vegan Parmesan
  • * Please use whatever products you have in your kitchen; plant-based ingredients are just what we have in ours.

Instructions:

  • Step 1.

    Split squash in half and remove seeds. Drizzle with olive oil and salt and place in a roasting pan covered with foil, skin side up, add 1/4 cup of water in the pan. Roast in oven at 400°F for 30-45 minutes or until squash is cooked. Allow to cool slightly before scraping out the flesh with a fork. Set aside.

  • Step 2.

    Heat butter over medium heat. Add Hungry Planet Italian MeatballsTM and lightly saute for 2-3 minutes. Add the tomato sauce and simmer for 10 minutes. Add the cooked squash and stir gently to combine. Taste for seasoning.

  • Step 3.

    Top with grated vegan parmesan cheese.
