Easy Stuffed Manicotti

This pasta bake is a comforting weeknight meal that is stuffed with cheese, plant-based meat, Italian herbs and smothered in marinara sauce.

Foodservice Recipe

Ingredients:

  • 3 ¾ tsp canola oil
  • ⅓ cup onion, diced
  • 1 ¼ tbsp garlic, minced
  • ¼ tsp red pepper flakes
  • 2 cups baby spinach
  • 12 oz Hungry Planet Beef™ Plant-Based GroundBuy Now
  • 1 tsp salt
  • ¾ tsp pepper
  • 2 cups plant-based ricotta*
  • ¼ cup plant-based parmesan cheese, grated*
  • 2 ¼ tbsp parsley, chopped
  • 8 oz dry manicotti
  • 3 ¼ cups marinara sauce
  • 2 cups plant-based mozzarella cheese*
  • * Please use whatever products you have in your kitchen; plant-based ingredients are just what we have in ours.

Instructions:

  • Step 1.

    Preheat oven to 350°F.

  • Step 2.

    Heat 1 ¼ tsp oil for vegetables on medium heat. Add ⅓ cup onions and cook until translucent. Add ¼ tsp chili flakes, 1 ¼ tbsp garlic, and 1 pt spinach and cook until aromatic and spinach has wilted. Remove from pan and set aside.

  • Step 3.

    Heat 2 ½ tsp oil for Hungry Planet Beef™ on high heat and sear Hungry Planet Beef™ while stirring every so often. Remove when beef has browned and add to bowl with vegetable mixture. Let cool.

  • Step 4.

    Cook Manicotti in boiling salted water following the cooking time on the box or until al-dente. Drain and let cool enough to handle.

  • Step 5.

    In bowl with cooled Hungry Planet Beef™ mixture, add 2 cups ricotta, ¼ cup parmesan, and 2 ¼ tbsp parsley. Mix to combine, then scoop into a piping bag to fill pasta. You can also use a zip top plastic bag and cut a corner off to use as a piping bag. Assemble the manicotti and by filling each cooled noodle with the meat and cheese mixture.

  • Step 6.

    Cover bottom of baking dish with half of the marinara sauce. Layout filled manicotti on top of sauce until dish is filled. Cover with the rest of the marinara sauce, sprinkle with 1 pt mozzarella cheese and bake until cheese melts, about 20 minutes. Broil to help cheese turn golden brown. Serve hot.
